A young Mid Wales apprentice chef completed a notable double in her competition debut at the Welsh International Culinary Championships (WICC) last week. Charlotte Latham, 21, from Llanidloes, who works at Chartists 1770 at The Trewythen Hotel in the town, won both the Wales heat of the Riso Gallo Young Risotto Chef of UK and Ireland and the Major International Main Course Challenge. She will now represent Wales in the Riso Gallo Young Risotto Chef of UK and Ireland Grand Final at The Tottenham Hotspur Stadium on the April 4, where the finalists will compete for an exciting prize. In the Wales heat, Charlotte cooked a lobster risotto. The overall winner will travel to Italy for a three day stage with Fabio Pisani, Alessandro Negrini and their team at the two Michelin starred Il Luogo di Aimo e Nadia in Milan, famous for its contemporary Italian cuisine. The winner will also be taken on a tour of the Riso Gallo Rice Mill in Italy and will learn about a selection of excellent rice, cresses and oils from Riso Gallo, Filippo Berio and Koppert Cress. Charlotte will also represent Wales in the Major International Main Course Challenge Final at Hotel, Restaurant & Catering (HRC) which is being held at ExCel, London from March 21-23 She cooked Welsh Lamb rump with giant pomegranate cous cous, butternut squash and lamb jus. Organised by the Culinary Association of Wales (CAW), the WICC are hosted by Grwp Llandrillo Menai’s campus in Rhos-on-Sea. Main sponsor is Food and Drink Wales, the Welsh Government’s department representing the food and drink industry. Charlotte, who has worked at Chartists 1770 at The Trewythen Hotel, since last May, is working toward her Apprenticeship in Professional Cookery with Cambrian Training Company. After competing in two competitions on Tuesday, she was in action again on Wednesday as commis chef to sous chef Matthew Smith, from Chartists 1770 at The Trewythen Hotel, who won a bronze medal in the National Chef of Wales final. “I was very nervous because it was my first competitions,” she said: “My mind just went blank on Tuesday morning but I was okay when I started cooking and I am really proud of myself. “I love the industry and enjoy the pressure and challenge. I really enjoyed being Matthew’s commis chef which was a great experience.” Looking forward to the two competition finals in London, she said: “It’s a bit scary but I’m going to try my best.” It proved a good WICC for Chartists 1770 at The Trewythen Hotel because apprentice Rosie Koffer also won the best kitchen live class. A new, Welsh Government funded project, using nature, art and food growing to enhance the health and wellbeing of the local community, has been launched this week.
The Wellbeing in Green Spaces Project is being co-ordinated by Open Newtown, an independent development trust and social enterprise which manages 130 acres of green spaces in Newtown. The 19-month project is running a series of free, six-week, structured workshops, focusing on understanding nature on our doorsteps to improve wellbeing, led by Cultivate, Oriel Davies Gallery and Montgomeryshire Wildlife Trust. Walk and draw workshops, tending the town’s edible plant beds, tree planting and bird box building are just some of the activities on offer. The first set of workshops start on Thursday, February 24, 11am-1pm, meeting outside Oriel Davies Galley. Having been involved in the Mid Wales tourism industry for nearly 50 years, Mr Rutherford was a former vice chairman and interim chief executive of MWT Cymru, also known as Mid Wales Tourism, based in Machynlleth. He arrived in Mid Wales in 1972 to take over as general manager of Llechwedd Slate Caverns, Blaenau Ffestiniog, having previously worked for a firm of accountants and consultants in London. In 1993, he bought Corris Craft Centre, which had only six studios and a café at the time. Next, he decided to use his Engineering Degree and interest in King Arthur and ancient mythology to convert the abandoned underground slate mine into King Arthur’s Labyrinth visitor attraction which opened in 1994. Mr Rutherford later added four additional craft studios, Corris Mine Explorers, Lost Legends of The Stone Circle and the Bwtri Welsh food and drink shop. Wishing to retire, he completed the sale of his business shortly before he died. Shirley Owen, Corris Craft Centre’s marketing manager, said: “Ian was passionate about the high quality of tourism in Wales. He dedicated his time to the local, regional and national tourism industry where his bright ideas, dedication, drive and wit touched the hearts of so many. “Ian has left behind the most wonderful legacy which will live on for many more people to enjoy.” Mr Rutherford was involved with a forerunner to MWT Cymru, the Mid Wales Tourism Council, which became Mid Wales Tourism (MWT) in 1991. He then served as MWT’s chief executive for six months during the reorganisation of the Wales Tourist Board. He had been involved with MWT since it was established and served as a director for many years before standing down last year. Responding to the life membership award in December, Mr Rutherford said: “I am really pleased that I have been honoured in such a way by my peers in the tourism industry. I have been involved in the tourism in Mid Wales for nearly 50 years and have been a great supporter of the industry working together.” Former MWT Cymru chairman, Anne Lloyd Jones, a fellow life member and a personal friend of Mr Rutherford and his family, said: “Ian was such a lovely man, a real gentleman and a tower of strength who always gave sound advice. “Mid Wales Tourism might not have survived without his leadership as interim chief executive when I was chairman. He will be very sadly missed.” Current MWT Cymru chairman Rowland Rees-Evans added: “Ian was a giant in the tourism industry. I always appreciated his sense of humour, advice, knowledge and experience within the industry. “Ian had been to the very top of the industry and had developed a good business. His passing is a big loss to the industry and especially to MWT Cymru.” Val Hawkins, MWT Cymru’s chief executive, said: “Ian made a massive contribution to MWT Cymru and Mid Wales tourism in general over many years. A new 31.25-mile ultra trail race, which will tackle the steep ascent of the iconic Devil's Staircase near Llanwrtyd Wells in Mid Wales, has been revived for this spring after being postponed due to the pandemic in 2020.
Llanwrtyd Wells is renowned for hosting a series of wacky and wonderful competitions, including the World Bog Snorkelling Championship, Man versus Horse Race and the World Alternative Games, to name but a few. Now Green Events, organiser of most of these competitions, is launching the Trailhead Get Jerky Devil's Staircase Ultra Trail Race, which covers 50.3km (31.25 miles) and has a total ascent and descent of 5,361ft (1,634m). Most of the race, on April 2, is off road with some short road sections including the “hellish” ascent (25%) of the iconic Devil's Staircase. The race, originally planned for April 2020, is being sponsored by Trailhead Fine Foods’ Get Jerky brand, award-winning premium Welsh Beef Jerky snacks made in Welshpool. The brand-new Kindling’s Treasure Trail at The Silver Mountain Experience, near Ponterwyd, Aberystwyth challenges children to find all the treasure with the chance of winning a treat. Steeped in mining history, The Silver Mountain Experience is open throughout the winter season, offering unique tours that explore the history of the site, both above and below ground. Families with young explorers will love the adventurous ‘A Dragon’s Tale’ guided tour where they join a quest to find the friendly resident dragon hidden within the mines. Eleri will reveal some useful hints and tips on how to be a stand-up comedian in a session packed with fun, games and the chance to test out a set on stage A stand-up comedian and writer, Eleri was raised in Aberystwyth and lives in Cardiff. She has performed at gigs throughout the UK, including Komedia (Bath and Brighton), Glee Club (Cardiff and Birmingham), the Edinburgh Fringe and Machynlleth and Aberystwyth Comedy Festivals. She was a series regular in the BBC sitcom ‘Tourist Trap’ and a semi-finalist on the BBC’s ‘New Comedian of the Year 2021’. She has written for Mock the Week (BBC 1) and shows on S4C and BBC Radio 4. With significant financial investment from the Welsh Government, the Winter of Wellbeing initiative encourages children and young people aged up to 25 to engage in social, cultural and physical activities outside of formal learning. Distillery co-founder and director Ellen Wakelam said: “We’re excited that Dan has joined In the Welsh Wind. Our sales have grown organically over the last four years since we began trading and we’re now ready to take a more targeted approach so that as many people as possible can enjoy the premium spirits we produce here on the Welsh coast.
“We already work with international customers on the custom spirits side of our business, producing gin for brands as far afield as France, Malta and Japan. We’re now planning the export strategy for our gin and our grain to glass Welsh Origin whisky.” During the pandemic, the small distillery team of four staff, plus Ellen and her partner Alex Jungmayr, reduced to one as employees moved to pursue other interests following furlough. Since August 2020, when initial restrictions began to ease, the distillery has grown the team in all aspects of its work and now employs 15 members of staff, including four apprentices, both at the distillery and newly opened gin bar, Bar 45 at 45, St Mary Street, Cardigan. Further recruitment is anticipated throughout 2022 as the business expands.
